Kale Chickpea Cesar Salad

Ingredients:

1/3 Package of Pre-Shredded Kale (From Trader Joe’s- Already Washed)

1 Tablespoon Olive Oil

Kosher Salt

Grounded Black Pepper

1/2 Avocado (Sliced)

1/2 Can of Garbanzo Beans/Chick Peas (Drained & Baked)

1 tablespoon paparika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon chili powder

2-3 Grilled Chicken Tenderloins (Chopped)

Handful of Croutons

2-3 Tablespoons of Cesar Dressing

Instructions:

preheat oven to 425 degree’s and place already drained garbanzo beans/chick peas on a baking sheet lined with tin foil. sprinkle kosher salt, pepper, PAPRIKA, garlic powder, onion powder & chili powder over garbanzo beans/chick pea’s. bake for 15-20 minutes or until roasted. season chicken TENDERLOINS with salt & pepper. place pan on stove with olive oil and bring to medium heat. add in seasoned chicken and saute for 3-4 minutes. Then turn over chicken with tongs & cook for another 4-5 minutes until cooked all the way through. while GARBANZO beans & chicken are cooking,Wash kale if you got a bundle vs. package. Shred kale and remove center rib (as it has a bitter taste). mix kale with olive oil, kosher salt, and pepper until it becomes shiny and slightly softer. once chicken is done chop up into pieces and add to salad. add in avocado, garbanzo beans/chick peas and CROUTONS. finally drizzle cesar dressing over the salad.

For Lunch I usually cook the garbanzo beans and chicken the night before and then assemble onto the salad the next day to save on time!
