Lemon Chicken with Orzo, Roasted Broccoli, & Tomatoes

Lemon Chicken with Orzo, Roasted Broccoli, & Tomatoes

Ingredients:

2 Chicken Thighs (Uncooked)

1 Cup Orzo (Uncooked)

1/2 Broccoli Stalk (Chopped)

1 Tomato (Chopped)

Handful of Feta Cheese

Kosher Salt & Ground Pepper

Lemon Juice

Olive Oil

Instructions:

Preheat Oven to 425 Degree’s. Place Chicken thighs on 1/2 of the baking sheet lined with tin foil. drizzle olive oil, sprinkle salt & Pepper over chicken and squeeze lemon juice over. on the other half of the baking sheet PLACE CHOPPED BROCCOLI & tomato. DRIZZLE WITH OLIVE OIL, SPRINKLE KOSHER SALT & GROUND pepper on both the broccoli & tomato & bake for 25 minutes. while chicken, broccoli, & tomatoes are baking BOIL WATER IN A MEDIUM POT ON THE STOVE. ADD IN A HANDFUL OF KOSHER SALT TO HELP WATER BOIL. ONCE WATER IS BOILING ADD IN orzo AND FOLLOW INSTRUCTIONS ON PACKAGE FOR COOKING. DRAIN orzo ONCE DONE COOKING and place on bottom of the plate. Layer on roasted broccoli & tomatoes. then sprinkle feta on top & serve!
