Salmon Puttanesca

Ingredients:

1 Piece of Salmon (Uncooked)

1/3 Cup of White Jasmine Rice (Uncooked)

1/2 Package of Shaved Brussels Sprouts (From Trader Joe’s)

1/3 Can of Basil Pasta Sauce

*Can substitute any other pasta sauce in

Handful of Capers

2 Lemon Slices & 1 Tablespoon Lemon Juice

Kosher Salt & Ground Pepper

Olive Oil

Instructions:

Preheat oven to 425 degree’s. place salmon on half of the baking sheet that is lined with tin foil. on the other half spread out shaved brussels sprouts. drizzle olive oil over both the salmon & brussels & sprinkle with kosher salt & Ground Pepper. for the salmon squeeze lemon juice over and place 2 lemon slices on the salmon & pour tomato sauce over salmon. then place baking sheet in the oven & cook for 25 minutes. While salmon & brussels are cooking MEASURE 1/3 CUP DRIED RICE & 2/3 CUPS WATER AND DUMP INTO A SMALL POT. BRING TO MEDIUM TO HIGH HEAT AND ONCE IT STARTS BOILING REDUCE TO LOW HEAT, COVER THE POT, AND COOK FOR 10 MINUTES. then plate salmon, brussels, and rice on a plate & serve!
