Cobb Salad

cobb salad

Ingredients:

3-4 Romaine Lettuce Leaves (Washed & Chopped)

1/3 Cucumber (Chopped)

2 Slices of Bacon (Chopped)

Handful of Sun Dried Tomatoes

*Can also substitute 1/2 fresh tomato (chopped)

2-3 Grilled Chicken Tenderloins (Chopped)

Handful of Shredded Cheddar Jack Cheese

1/2 Avocado (Sliced)

Champagne Vinaigrette Dressing or Ranch Dressing

Instructions:

SEASON CHICKEN TENDERLOINS WITH SALT & PEPPER. PLACE PAN ON STOVE WITH OLIVE OIL AND BRING TO MEDIUM HEAT. ADD IN SEASONED CHICKEN AND SAUTE FOR 3-4 MINUTES. THEN TURN OVER CHICKEN WITH TONGS & COOK FOR ANOTHER 4-5 MINUTES UNTIL COOKED ALL THE WAY THROUGH. once chicken is complete transfer to a cutting board. rinse pan out and dry. re-heat to medium heat on the stove and fry bacon for 2-3 minutes on each side. transfer onto a paper towel after to remove excess grease. then chop into pieces.

Assemble romaine lettuce on plate, add on cucumbers, bacon, tomato, grilled chicken, cheese, & avocado. drizzle champagne VINAIGRETTE dressing over the salad & serve!
