Chicken & Broccoli Pasta

Ingredients:

1/2 Cup of Bow Tie Pasta (Uncooked)

*Can substitute other shapes of pasta i.e. spirals, penne, rigatoni, etc.

1/2 of Broccoli Stalk (Chopped & Baked)

2-3 Chicken Tenderloins

Handful of Low Fat Mozzarella Cheese

Kosher Salt & Ground Pepper

1/3 of a Can of Basil Pasta Sauce (Trader Joe’s)

*Can Substitute for any other pasta sauce

Instructions:

preheat oven to 425 degree’s and place chopped broccoli on a baking sheet lined with tin foil. drizzle with olive oil, sprinkle kosher salt & ground pepper. bake for 20 minutes. while broccoli is cooking SEASON CHICKEN TENDERLOINS WITH SALT & PEPPER. PLACE PAN ON STOVE WITH OLIVE OIL AND BRING TO MEDIUM HEAT. ADD IN SEASONED CHICKEN AND SAUTE FOR 3-4 MINUTES. THEN TURN OVER CHICKEN WITH TONGS & COOK FOR ANOTHER 4-5 MINUTES UNTIL COOKED ALL THE WAY THROUGH. While the chicken is cooking, Boil water in a medium pot on the stove. add in a handful of kosher salt to help water boil. once water is boiling add in pasta and follow instructions on package for cooking. drain pasta once done cooking & heat the pasta sauce in the microwave. then layer pasta on a plate, adding in chicken, broccoli, tomato sauce, and sprinkle mozzarella cheese on top & serve!

I usually will make a larger portion and pack up for next day’s lunch!
