Lemon Salmon, Farro, Mushrooms & Cucumber Tomato Salad

Ingredients:

1 Piece of Salmon (Uncooked)

1/2 of a Lemon

1/3 Tomato

1/3 Cucumber

1/2 Package of Fresh Sliced Mushrooms

1/3 Cup of Dried Farro (Uncooked)

Kosher Salt & Ground Pepper

Olive Oil

Instructions:

Preheat oven to 425 degree’s and take salmon and place on baking sheet lined with tin foil. drizzle olive oil, sprinkle salt & ground pepper on salmon. squeeze fresh lemon juice over salmon and place 2 slices of lemon over salmon. place in oven and cook for 20-25 minutes. while the salmon is cooking, take 1/3 cup of dried farro & add 2/3 Cups of water in a small or medium pot and place on stove. heat to medium to high and bring to a boil. once the farro is boiled reduce to low heat, cover, and cook for 10-15 minutes.

while farro and salmon are still cooking take fresh sliced mushrooms and pour into a small pan. (dry no oil or butter). heat to medium heat and stir until mushrooms brown and become SAUTEED. chop tomato and cucumber and place on place. add mushrooms, farro, and salmon as they finish cooking.
